So yesterday I was feeling like Autumn was just around the corner and today it is hot as hell here in the sunny south of Niagara! You just never know what the weather will hold this summer! This is the strangest season ever!
So I have been craving pineapple lately and bought a nice juicy one on sale (yay for saving money!). After eating to my hearts desire, I had some left over. My brain immediately started searching the recipe index I keep stored in my head and pulled out a recipe for Pineapple salsa!
I haven’t made it in several years and for the life of me, I cannot figure out why! It isn’t even much of a recipe it is that easy and it is so delicious with so many things!
Use pineapple salsa for chicken, fish, pork chops, sausage, with tortilla chips, fish tacos, etc, etc! Again I start wondering why I haven’t made it in so long!
You won’t even need to write the recipe down (unless you have a bad memory, then I would suggest saving this post!)
EASY PINEAPPLE SALSA
- Green pepper
- Salt and pepper
I’m not even going to suggest ingredient amounts because I have never used measurements and have never made a bad salsa! You can even throw in some cilantro (which I hate more than anything in this world, so I never use it.)

How I have never thought to do this before is beyond me! I mean I have been cooking and creating recipes for 25 years and I NEVER thought of putting pesto on a pizza. I am a little ashamed, I’m not going to lie!
It all started last week when I made Garlic Scape Pesto from the garden! It was so delicious, I started brainstorming recipes that I could use it with. I had just picked up some juicy tomatoes at the farmers market and I had mozzarella in the fridge. The light bulb went off!
I made this recipe with a Oat Pizza Crust because I am gluten free, but this recipe is super simple and will work with any crust or pesto recipe you have (or you can just use mine, that is ok too!)
PESTO TOMATO PIZZA
1 x Pizza Crust
1 x Jar of Pesto
3 x cups shredded mozzarella
2 x Tomatoes, thinly sliced
Salt and Pepper to Taste
Fresh basil leaves (optional)
Spread your pesto on your crust in a thin (or thick, depending on your taste!) layer. Add your shredded cheese and tomato slices. Pop in the over for 20-25 minutes at 350 degrees. Let sit for 5 minutes, slice and eat!
Tomatoes fresh out of the garden are definitely on the top of my food chain! Juicy, red and delicious with a splash of balsamic vinegar, salt and pepper (insert drooling noises here!)
Growing healthy tomatoes is not rocket science, but yielding tons of fruit requires a few tricks of the trade (did you know tomatoes were a fruit?)
Other than the obvious soil condition, fertilizer and plenty of sun and water, there is a little trick to growing huge, fruit delivering plants! Remove the sucker leaves!
These suckers suck the nutrients from the producing leaves. You need to remove them as soon as they pop up. They are pretty easy to find. They grow in the joints of the regular stems and suck and suck the life from your tomatoes. I guess we could say these little stems really suck!!
Just snap them off and you are good to go (don’t mind the dirt in my nails, I have been playing in the dirt)
A couple years ago, a friend told me you can plant them in the dirt and they will grow into fruit producing tomato plants. I thought it was impossible but far and behold, it worked! So if you have the space, you can grow lots of tomatoes from your already growing plants!
Hope this little trick gives you millions (ok, maybe that’s a little exaggerated) of tomatoes to enjoy this summer!
Good morning everyone! Last night I made a great new dish and it was so good, I wanted to share it with you today 😁
This was super duper yummy! I wasn’t too sure with the amount of butter, but it was so worth it!
Fresh tomatoes, fresh thyme from the garden and fresh tilapia make for an amazing flavourful dish! I served it over rice with a salad, but it would be just as delicious alone.
Tomato Thyme Tilapia in Butter Sauce
- 1/4 cup butter
- 1 tbsp lemon juice
- 1/2 a medium onion
- 1 chopped clove of garlic
- Salt and pepper
- 1 large tomato
- Fresh thyme to taste
- 4 fillets of tilapia
Add a tsp of butter to the pan and fry up the onions and garlic for a minute or so until onions are clear.
Add remaining butter until melted, then add lemon juice and thyme.
Salt and pepper fish as add to the butter sauce. Top with diced tomatoes.
Let simmer on low, carefully flipped the fish after a couple of minutes.
Serve with rice or alone or with a salad!
