Pretty Like a Flower, Tasty Like Food

In my opinion, if you plant something in your garden, ideally, you should be able to eat it. Gardening takes water, valuable time and money to grow, so you minus well reap the rewards!

There are so many beautiful herbs and vegetables that have flowers and look just like other perennials you can spend hundreds of dollars on (but can’t eat). If you plant the right ones together, they can come into bloom in a timely manner, ensuring your gardens are always bright and colourful!

In the past couple of years, I have been slowly replacing greenery that offers no nutritional value with delicious AND pretty plants in my gardens! 

Strawberries, chives, raspberries and garlic

I love planting herbs! They are probably the prettiest and tastiest plants. In addition to my chives, mint, dill, parsley, sage and basil, I have added lavender, oregano and thyme this year. It just adds so much beauty and it is amazing to add to a salad.

As part of building a sustainable lifestyle, we want to grow as much food as we can for ourselves! Having roses, daisies and gardenias are nice, but at the end of season, all they were good for was to look at and then chop down. I would much rather eat the plants that I spend so much time watering, pruning and weeding!!

Tomato Thyme Tilapia in Butter Sauce

Good morning everyone! Last night I made a great new dish and it was so good, I wanted to share it with you today 😁

This was super duper yummy! I wasn’t too sure with the amount of butter, but it was so worth it! 

Fresh tomatoes, fresh thyme from the garden and fresh tilapia make for an amazing flavourful dish! I served it over rice with a salad, but it would be just as delicious alone. 

Tomato Thyme Tilapia in Butter Sauce

  • 1/4 cup butter
  • 1 tbsp lemon juice
  • 1/2 a medium onion
  • 1 chopped clove of garlic 
  • Salt and pepper
  • 1 large tomato 
  • Fresh thyme to taste
  • 4 fillets of tilapia

Add a tsp of butter to the pan and fry up the onions and garlic for a minute or so until onions are clear. 

Add remaining butter until melted, then add lemon juice and thyme. 

Salt and pepper fish as add to the butter sauce. Top with diced tomatoes. 

Let simmer on low, carefully flipped the fish after a couple of minutes. 

Serve with rice or alone or with a salad!

Porch Herbs

Herbs bring so much flavour and depths to many recipes, but sometimes the act of putting on shoes and walking through the yard to pick them from the garden discourages me from using them regularly. 

I can use herbs is pretty much any dish! Basil in a tomato salad, thyme is a slow cooked tomato sauce with tilapia and chives on… well pretty much anything! 

For this reason, I moved my favourite herbs into containers and right onto my porch. Now when I want to add some fresh taste to a recipe, I just walk out my front porch with some scissors and take what I need! 

For the perennial herbs, just cut them back in the fall and plant back in the garden! You can also move the pots to a place out of freezing cold and wind and cover the plants with straw or leaves for the winter!
